Decided not to postpone the sharing of the promised banana bread recipe (with an oat milk). A super simple recipe for perfect Sunday breakfast. Let’s get long introductions off – the ingredients tell about itself: everything is very available and economical, but at the same time it is HEALTHY!


Extra seeds spelt banana bread (vegan & sugar free)
Ingredients (for 1 bread)
  1. 250 g Spelt flour
  2. 400 g Overripe bananas, mashed
  3. 125 g Oat milk (or nut milk)
  4. 60 g Vegetable oil
  5. 60 g Jerusalem artichoke syrup or honey
  6. 60 g Dates, chopped
  7. 100 g Sunflower seeds
  8. 50 g Pumpkin seeds
  9. 50 g Chia seeds
  10. 1 tsp Baking powder
  11. ½ tsp Baking soda
  12. ½ tsp Sea salt
  13. 1 tsp Ground cinnamon
  14. ½ tsp Ground cardamom
  15. Extra seeds for topping

  1. In a bowl, mix together oil, milk and syrup, add mashed bananas and whisk until smooth.
  2. In a large mixing bowl, whisk together sifted flour, baking powder, soda, salt and spices. Add the seeds and chopped dates to the flour mixture.
  3. Combine the flour mixture and bananas mixture and mix with a spatula until smooth.
  4. Pour the batter into the lined loaf baking pan. Leave the center higher than the edges. Top the batter with the rest of seeds.
  5. Put the pan in the oven preheated to 180°C for 50-60 minutes until golden color and a skewer poked into the center comes out clean.
  6. Remove from the oven and let it cool on a wire rack.
  1. You can use your favorite gluten-free mix instead of the spelt flour with if desired.
  2. Don’t be embarrassed that the batter fills almost full baking pan. Bread will not rise too much during baking.
